The Best Chocolate Chip Cookies for Passover

Just because it's Passover doesn't mean you have to be deprived of deliciousness! This simple, delectable Kosher-for-Passover recipe that my boyfriend and I created actually tastes better than most cookies made with regular flour-- for real they're so yummy. So say goodbye to the sadness of giving up leavened desserts for seven days, because these treats are sure to make it all better! Try them for yourself if you don't believe me :)


Prep Time: 15 mins

Cooking Time: 15 mins (at most)

Total Time: 30 mins


Ingredients You'll Need:

1 cup Matzo Cake Meal

1/2 cup Tapioca Flour

3 eggs

2 teaspoons vanilla extract

1/4 teaspoon salt

1/2 cup salted butter, softened (1 stick)

1 1/4 cups white sugar

1/4 cups brown sugar

1 (12 ounce) bag of chocolate chips


*Most of the ingredients should be available for purchase at your local supermarket, but the Matzo Cake Meal and Tapioca Flour I found at my VONS*






Directions:

1. Preheat oven to 350 degrees Fahrenheit.


2. In a small bowl, whisk together the tapioca flour, matzo cake meal, and salt.


3. In a larger, separate bowl, beat the eggs. Then add the sugars, softened butter, and vanilla extract. Stir together.


4. Take the small bowl of dry ingredients and add them into the larger bowl. Mix together thoroughly.


5. Add in the chocolate chips, stir dough until combined smoothly. Batter should be thick.


Try them Leo's Way: If you're crazy like my boyfriend and don't like chocolate (hehe just kidding), omit the chocolate chips and make them as sugar cookies or snicker-doodles! For snicker-doodles, combine cinnamon and sugar in a bowl and roll the balls of dough in the mixture before placing them in the oven.


6. Line baking sheets (2) with foil and spray each lightly with cooking oil.


7. Place spoonfuls of cookie dough two inches apart onto the prepared baking sheets.


8. Bake cookies in the oven for 13-15 minutes.

*For softer, chewy cookies, take them out at 13 mins. For crunchier cookies, leave them in until the 15 min mark or until they're golden brown.*


9. Once done, let the cookies cool on the baking sheet for a couple of minutes. Then, use a spatula to transfer them to a cooling rack.


10. Eat & enjoy!! :)
